Ingredients for Pork:

  • 1 lb. pork tenderloin
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tb. olive oil

Ingredients for BBQ Sauce:

  • 1 C. frozen blueberries
  • 1 Tb. BBQ sauce (we used Sweet Baby Ray’s)
  • 1/4 C. juices from cabbage

Ingredients for red cabbage:

  • 3/4 of a red cabbage, thinly sliced
  • 1 white onion
  • 1 C. red wine
  • 1/4 C white wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cinnamon
  • 1/4 tsp. clove
  • 1 tsp. chicken bouillon, or 1 cube

Ingredients for Corn Bread:

  • 1 Egg
  • 1 1/8 C. milk
  • 3/4 C. Flour
  • 3/4 C. Cornmeal
  • 3 Tb. Sugar
  • 3 tsp. Baking powder
  • 1 tsp. Salt
  • 1/3 C. butter (melted)

Making the Pork

Preheat oven to 400 degrees.

Sprinkle salt and pepper over your pork tenderloin, to cover all sides.

In a large oven safe skillet, over high heat, heat up the pan with the olive oil. Once the pan is nice and hot, add in your seasoned pork. Sear on each side for about 2-3 minutes, until you get a nice browned color. Place the pork into the oven for 9-11 minutes, or until your meat thermometer reaches 145 degrees. Remove from the oven, and allow to rest, covered with foil for 5-7 minutes.

Cut into 1 inches slices and serve with the cabbage and cornbread.

Making the Red Cabbage

In a crock-pot add your sliced onion, thinly sliced red cabbage, make sure that you cut the hard core out of the cabbage before slicing. Add in your red wine, vinegar, spices, and chicken bouillon. Place on high for 4 hours. Then, turn to low heat for another 2 hours.

Making the BBQ Blueberry Sauce

Once the cabbage has cooked, take 1/4 cup of the juices, into a small sauce pan. Add in your frozen blueberries and BBQ sauce. Bring to a boil and reduce to a simmer for 10 minutes. Allow to cool slightly, for 2-3 minutes, the sauce will tighten slightly as it cools.

Making the Cornbread

Preheat the oven to 425 degrees

In a bowl, combine the wet ingredients: eggs, milk sugar, and butter. Whisk to combine. In another bowl, combine the flour, cornmeal, salt, and baking powder. Make a well (whole) in the center of your dry ingredients. Pour in your wet ingredients into the center of the well. Using a whisk, slowly incorporate the wet and dry ingredients together until just combined.

Pour into a greased 9X9 baking pan.

Bake for 15-20 minutes until browned along the edges. Serve warm with honey.
