WK51: Open Faced Cuban BBQ Pork Sandwiches

The idea to cook our shredded pork on the stove, to create crispy edges, came from our friend Michael. His husband, Doug and he have been stopping by, almost weekly for dinner. WK51 Free Recipe Bonus: Apple Baked Roses

Ingredients:

2 medium apples
1/2 lemon, juice
2 cups water plus 2 TB.
1 sheet of puff pastry
cinnamon
3 TB. apricot preserve
flour for dusting

Other Ingredients:

vanilla ice cream
caramel sauce, store bought or homemade

WK50: Roasted Pork with Blueberry BBQ Sauce

Ingredients for Pork:

1 lb. pork tenderloin
1 tsp. salt
1 tsp. pepper
1 Tb. olive oil

Ingredients for BBQ Sauce:

1 C. frozen blueberries
1 Tb. BBQ sauce (we used Sweet Baby Ray’s)
1/4 C. juices from cabbage

Ingredients for red cabbage:

3/4 of a red cabbage, thinly sliced
1 white onion
1 C. red wine
1/4 C white wine vinegar
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. cinnamon
1/4 tsp. clove
1 tsp. chicken bouillon, or 1 cube

Ingredients for Corn Bread:

1 Egg
1 1/8 C. milk
3/4 C. Flour
3/4 C. Cornmeal
3 Tb. Sugar
3 tsp. Baking powder
1 tsp. Salt
1/3 C. butter (melted)

WK49: Turkey, White Cheddar and Onion Jam Panini

Ingredients for panini:

8 slices of hearty bread
8 oz. of white sharp cheddar cheese sliced
4 Tb. onion jam spread (we found it at Harris Teeter)
16 slices of roasted deli turkey
4 Tb. butter
salt and pepper

Making the Panini
Take 4 slices of your bread and spread some butter on the outside. Place buttered bread side down, onto a preheated flat top griddle. Add slices of sharp white cheddar cheese, 4 slices of turkey meat, and then on the other slice of bread add 1 tablespoon of the onion jam. WK48: Roasted Shrimp, Avocado and Arugula Salad

Ingredients for shrimp:

36 shrimp (peeled and deveined; fresh or frozen)
1 Tb. olive oil
1/2 tsp. salt
1/2 tsp. lemon pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. paprika
pinch of cayenne

Ingredients for Salad:

1 bunch of arugula
1 avocado
2 large tomatoes
1/2 white onion
1 lemon
1/2 Tb. olive oil
salt and pepper to taste

Making the Shrimp
Preheat the oven to 400 degrees.

In a large bowl, place in your peeled and deveined shrimp. Add in all of seasonings and olive oil. Toss together with your fingers.
